Meet Victor - Our Chief Food Disruptor

Born in Caracas, Venezuela, he was raised on food made from real, wholesome ingredients. After moving to the U.S. in pursuit of the American Dream, he built a thriving career financial services and insurance. But deep down, he knew his purpose was bigger than numbers.

Driven by a love for real food, he left his career behind to bring back simple, wholesome ingredients to American tables—starting with better tortillas.

Then, food became personal

Food isn’t just something to consume—it’s what keeps people going. That truth became personal when Victor’s father was diagnosed with Lynch Syndrome, a condition that forced a complete overhaul of his diet. That journey exposed an ugly reality: the food system isn’t built for health—it’s built for profit. And everyone is paying the price.

From Frustration to Innovation

Victor wasn’t alone in his food wake-up call. His longtime family friend, Andreina, struggled with leaky gut, reacting to even “healthy” foods. Frustrated, she began experimenting, which led to the first cassava tortilla. This was the lightbulb moment that help spark Healthy SEN!

Healthy SEN was born

Alongside his dad and his partner–Andreina–Victor founded Healthy SEN with a simple mission—to bring real food back. No shortcuts, no fillers, just honest ingredients that fuel and heal, not harm. The first step? Cassava tortillas that prove gluten-free can still be damn good.
